🧂 Ingredients
1 medium sized pumpkin
3 large eggs
13.5 oz coconut milk or evaporated milk
1 teaspoon vanilla extract
½ cup light brown sugar
½ teaspoon seat salt
1 tsp ground cinnamon
1 ½ tsp pumpkin pie spice
1 premade 8-9 inch pie crust
👩🍳 Steps
1. Preheat the oven 350°F (180°C)
2. Cut the pumpkin and half and scrape out the seeds. Lay it cut-side down on a baking sheet and place it in the oven for about 45 minutes until tender (a fork should be able to pierce the flesh easily). Peel the pumpkin and blend into a purée. Measure 2 cups.
3. Beat eggs in a large bowl. Mix in pumpkin purée, milk of choice, vanilla, sugar, salt, cinnamon, and pumpkin pie spice until smooth.
4. Preheat the oven to 425°F (220°C). Fill premade crust ~80% full. Cover edges with foil, pastry shield, or a sheet tray.
5. Bake 15 min at 425°F, then remove the crust cover, reduce to 350°F (175°C) and bake 50–60 min, until mostly set.
